Gingerbread Baked Apple Pancake (SRC)


I never have to be asked twice what I want for breakfast.  It's always pancakes.  Pancakes with real maple syrup.  And really, any kind of pancake is fine by me.  They can be fluffy buttermilk pancakes, pancakes loaded with berries or even pancakes that are flavored with a touch of cinnamon and sprinkled with toasted walnuts are all just lovely.  How about putting apples in pancakes?! Heck yes! How about adding some special spices and a few tablespoons of molasses to make the pancake a gingerbread flavored pancake?  OMG yes!  Let's do it. 


A Gingerbread Baked Apple Pancake is the actual name.  One big, beautiful and delicious pancake that screams FALL TIME.  First there is a layer of sweet and gently spiced apples and then a perfect pancake batter that has a touch of molasses stirred into it which is poured over the apples.  Just before this pancake is popped into the oven a sprinkling of sugar and spice goes over the top.  Delicious!  Within about 10 minutes you have a beautiful masterpiece of a pancake coming out of the oven.  I suggest having warm maple syrup to  drizzle on top of the servings along with a dash of powdered sugar.  


Kate of Kitchen Trial and Error is the lovely creator of this recipe.  I "met" her through my Secret Recipe Club assignment for this month of September. What an absolute gem Kate is!!! A beautiful mother of 2 children and is a fellow New Englander as she lives in NY state. 

I have found myself wanting to make EVERYTHING on her blog.  All of her recipes speak to my taste buds in such a delicious way!  The variety of recipes that are found on Kitchen Trial and Error is astonishing.  If you like caramel sauce than you should definitely try your hand at Kate's recipe for Caramel Pear Butter - I know I want to! I also want to make her Coffee Blondies (I LOVE anything coffee flavored!) along with the recipe for Slow Cooker Honey Mustard Drumsticks with Tangy Apple Slaw (this recipe sounds divine to me!).  

Make a point to whip up this lovely baked pancake - it's delicious and it feeds a family of 4 quite easily.  Fall is biting at our heels  - embrace it with this recipe by your side. 



Gingerbread Baked Apple Pancake 
                    ( recipe from Kitchen Trial and Error )

Ingredients:
2-3 large applesn - peeled, cored and sliced
1/2 cup sugar
1 1/2 tsp cinnamon
1/2 tsp ground ginger
1/4 tsp ground cloves 
1/4 tsp ground nutmeg
3 eggs
3/4 cup pancake mix
6 Tbsp milk
2 Tbsp molasses

Directions  
 Preheat oven to 425 degrees F.  Butter a pie dish and set aside.

In a medium bowl combine sugar and all the spices.  Divide this mixture in 1/2 into 2 bowls. Set aside one bowl.  In the second bowl toss in prepared apples and coat well with sugar/spice mixture. Pour apple mixture into pie plate and cover with plastic wrap.  Place pie plate with apples in microwave and cook for 5 minutes.  Carefully peel off plastic wrap.

Mix up pancake batter in a large bowl - combine eggs, pancake mix, milk and molasses.  Stir together until smooth.  Pour batter over cooked apples and bake in preheated oven for 10-12 minutes.  Cool for a couple minutes and then serve with warm maple syrup and a dash of powdered sugar.  Enjoy!!

Blueberry Pie Pancakes


I am always on the look out for new pancake recipes.  I kind of have a thing for pancakes....my girls do to.  When I came across a "pin" on Pinterest for these lovely blueberry pancakes I couldn't resist trying my hand at the recipe.  Goodness am I glad I did! Such. Good. Pancakes this recipe created!!!  And yes, these pancakes do taste like blueberry pie.  I believe it is the combination of oats and blueberries along with a touch of sugar, a sprinkling of cinnamon and vanilla extract that makes such a taste possible in these pancakes.  Honestly, I can not wait to make these pancakes again.  They are my new favorite pancakes. 

The original recipe was only enough for one serving so I tripled the recipe.  And unlike many pancake recipes are NO eggs in this recipe.  If you are a pancake lover like me and like blueberries these pancakes are a must for you.  :-)

Blueberry Pie Pancakes
(recipe slightly adjusted from Chocolate Covered Katie)

Ingredients:

1 cup blueberries - fresh or frozen
1 cup flour (of your choice - I used all purpose)
6 Tbsp rolled oats
1 tsp ground cinnamon
1/2 tsp salt
2-3 Tbsp sugar
1 cup milk (I used 2 %)
1 Tbsp oil (if you wish)

Directions:
1. In a large bowl combine dry ingredients and then wet ingredients.  Stir together just to combine - do not over mix.

2. Pour batter by 1/4 cupful onto a hot and greased frying pan or griddle.  Flip pancakes once.  Serve with topping of your choice....such as warmed REAL maple syrup and sweet cream butter....d'lish!

Gratitude and a Pancake Party

Gooble! Gooble!  Happy Thanksgiving!

 In honor of Thanksgiving I would like to share some thoughts and feelings on gratitude. I am grateful and so very fortunate for my beloved family (far and near), my precious, precious friends, a home that provides us with warmth and happiness, an amazing job and of course my love for creativity in so many realms of life - especially in my kitchen!  Which brings me to the fact that I have been wanting to thank all of you that read and follow my blog.  When I receive a comment on my blog or run into someone out and about in town that gives me a compliment or expresses how much they have enjoyed a particular recipe I have shared it makes me so happy (and grateful too!).  I send all of you a virtual {HUG} of appreciation for all of the support, guidance and positive reinforcement that you have given me through my blog....it is GREATLY appreciated. :-)  May your Thanksgiving be filled with delicious foods, wonderful memories and plenty of laughter!  Happy, Happy Turkey Day!!!

In hopes that most of you have a special holiday weekend planned ahead of you I thought I would share some of my most recent favorite pancake recipes so that you could treat yourself and your friends and family to a extra special breakfast.

I always enjoy a good pancake or two (or three)....especially with warmed up REAL maple syrup and butter that melts right into the pancakes.  Yummieeeee! 



Cinnamon Bun Pancakes
(recipe discovered on TK from member, sapeylissy)

Ingredients:

1 1/2 cup AP flour

3 Tbsp sugar

1/2 tsp salt

4 tsp baking powder (yes, thats right 4 tsp of baking powder)

1 Tbsp ground cinnamon

2 eggs, beaten

1 cup milk

2 Tbsp light corn syrup

1/4 butter, melted

1 Tbsp vanilla extract

Directions:

1. In a medium bowl combine flour, sugar, salt, baking powder and ground cinnamon.  Whisk all together and set aside.

2. In another bowl combine beaten eggs, milk, corn syrup, melted butter and vanilla extract.
Stir in flour mixture until combined - do not over mix.

3. Heat your griddle or frying pan with butter over medium-low heat.  Pour about 1/4 cup of batter into pan for each pancake.  Brown on both sides.

Serve with warm maple syrup and butter....enjoy!


The second pancake recipe I present to you is full of delicious pumpkin flavor.....wonderful as a Fall breakfast treat!




Pumpkin Pancakes
(recipe discovered on TK from the member, Heather Christo)

Ingredients:

1 cup AP flour

1 tsp salt

1 tsp baking soda

1 1/3 cup buttermilk

3/4 cup pumpkin puree

1 egg

2 Tbsp butter, melted

1/2 cup toasted pecans, chopped (optional) - for garnish/topping

Directions:

1. Combine all dry ingredients in a medium bowl with a whisk or a fork.

2.  Make a well in the center of your mixed dried ingredients and add the buttermilk, pumpkin puree and melted butter.  Mix well all together until batter is smooth.

3. Grease your griddle or pan over medium-low heat with butter or oil.  Pour 1/4 cup of batter into heated pan.  When bubbles start to form on the surface of your pancakes, it is time to flip the pancakes.  Let them cook another minute before removing them onto a plate.

Serve hot with butter and REAL maple syrup and sprinkle with some chopped toasted pecans if you wish....ENJOY!!!

Blueberry Sour Cream Pancakes


Once again I am honoring my good friends of the Summer.... Blueberries!!!


This time I will be sharing with you one of my all time favorite pancake recipes....Sour Cream Pancakes with Blueberries - deeeeeelish!  The pancakes are light and fluffy and FULL of flavor.  The sour cream really does wonders to the batter....it's like the secret ingredient to the batter. :-)

 The beauty of this recipe is that you can easy switch up the blueberries for other berries or fruit or just make the pancakes plain without any extra add-ins.

Blueberry Sour Cream Pancakes
(recipe from Ree Drummond's cookbook, The Pioneer Woman Cooks)
*makes twelve 4" pancakes*

Ingredients:



1 cup sour cream

7 Tbsp flour (yes, only 7 Tbsp's!!)

1 Tbsp sugar

1 tsp baking soda

1/2 tsp salt

2 large eggs

1/2 tsp vanilla extract

1 cup blueberries - fresh or frozen

Butter and Maple Syrup

Directions:

1. In a medium bowl scoop in sour cream then add in flour, sugar, baking soda and salt....


....Mix to combine - very gently.  Stop short of mixing the batter together completely....you want the pancakes to have some interesting texture.

2. Beat the eggs in a separate bowl...


....then add the vanilla extract...


...and stir to combine.

3. Pour egg/vanilla extract mixture into the sour cream/flour mixture...


...Once again gently mix just until combined.  A little white and yellow swirling is great!

4.  Fold in blueberries....


5. Heat up iron skillet or griddle over medium-low heat with a pat of butter or cooking spray (I prefer butter in this case for the yummy flavor).  You want the skillet to get nice and hot before you pour the batter into the pan....about a 1/4 cup at a time.   Cook for 1 - 1 1/2 minutes, then flip the pancakes over.  Cook for another 45 seconds....

 

.....then remove to plate and embellish with butter and warm maple syrup....


....Continue with remaining batter - adding butter to skillet when needed before adding in more pancake batter.  Be careful not to burn the butter!!
