(SRC) Raspberry Almond Coffee Cake


Happy Monday!  It's always nice to start off the week on a happy note.  It sets the mood for the rest of the week I believe.  Setting the mood for the week on a delicious note is not a bad idea either.  And I've got just the treat for you - Raspberry Almond Coffee Cake.  A delicious cake layered not once but twice with a surprise sweetness and then topped off with an almond crumble. There is a cinnamon sugar layer and then a layer of precious raspberries in this coffee cake making it extra special. 




Speaking of extra special, the blog I discovered this recipe on is more than extra special - it's SUPER DUPER extra special!! I found this recipe on Inquiring Chef - my assignment for the Secret Recipe Club this month.  What an absolute gem Jess is from Inquiring ChefJess lives in Bangkok, Thailand (YES, Bangkok, Thailand) with her hubby and twin baby girls.  She whips up gorgeous, gorgeous dishes and sweets that make your heart pitter patter and your mouth drool.  She writes her posts with simplicity yet with details that bring you right into her world.  And best of all she allows you to follow the growth of her beautiful, beautiful girls Molly and Clara.  In fact she updates their pictures and developmental progress every month.  I am on the edge of my seat for their 1 year old update coming up at the end of this month.  Please make sure you check out Inquiring Chef not only for Jess' cutie pie girls but also for all her fantastic recipes.  Jess' blog is not to be missed. 



 The next time you are looking for delicate yet delicious cake to serve for brunch, a snack or simply as a dessert please don't hesitate to whip up this very cake.  It can be made in a 9" spring form pan (as both Jess and I did) or you can use a 9x13 pan.  Either size pan would be just fine.  And for the raspberry layer, fresh or frozen berries can be used.  I actually used a combo of both as I didn't have enough fresh to fully cover the batter as I wanted to do and it came out just fine.  I would also like to point out that this cake is really not overly sweet as often cakes can be.  Only 3/4 of a cup of granulated sugar is used in the batter.  The almond topping also call for sugar which gives a perfect pairing with the "not too sweet" cake.

Raspberry Almond Coffee Cake 
   (recipe from the lovely food blog, Inquiring Chef)

Topping Ingredients - 
1 cup all purpose flour
3/4 cup brown sugar, packed
1/2 tsp kosher salt
1/2 tsp cinnamon (my addition
1/2 cup silvered or sliced almonds
6 TBSP cold unsalted butter, cut into 1/4" cubes

Cake Ingredients - 
1 1/2 cup all purpose flour
1 TBSP cornmeal
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp kosher salt 
3/4 cup granulated sugar + 3 TBSP sugar, divided 
6 TBSP unsalted butter, at room temperature 
2 large eggs
1/2 tsp vanilla extract
1 cup buttermilk
2 cups raspberries, fresh or frozen 
1 TBSP cinnamon 

Directions - 

Make topping mixture by whisking together the flour, brown sugar, salt and cinnamon until well combined.  Add in cold butter cubes and mix into dry ingredients with your fingers or pastry cutter.  Butter should be incorporated into the dry ingredients until large crumbs form.  Refrigerate topping mixture until ready to use.

Preheat oven to 350 degrees F.  Grease a 9" spring form pan and set aside.  Make the cake batter by using a medium bowl to combine flour, cornmeal, baking powder, baking soda and salt.  Set dry ingredients aside.  Beat butter and 3/4 cup sugar in a large mixing bowl.  Add in eggs one at a time - beat well with each addition. Add in vanilla extract too. 

 Add in dry ingredients to the wet mixture in 3 separate additions - alternating with the buttermilk - starting and ending with the dry ingredients. Once all has been mixed well together pour 1/2 of batter into prepared pan. 

Combine 1 TBSP cinnamon and 3 TBSP sugar in a small bowl.  Sprinkle evenly over 1/2 of cake batter layer.  Spoon remaining batter over cinnamon & sugar layer.  Carefully spread with the back of a spoon or an off set knife if need be.  Sprinkle raspberries over this layer and then the topping mixture.  Bake for 55-60 minutes or until cake is golden brown and toothpick inserted into the center comes out clean.  

Cool cake, slice and enjoy! 



Jess has stated that this cake is great as a "make ahead" cake as it only gets better each day.  Store in an air-tight container at room temp for best results.

Cinnamon Cauliflower Coffee Cake



I have used cauliflower in many dishes.  I have made cauliflower au gratin, I have made quite a few stir fries with cauliflower tossed into it.  I have also made MANY a salad with cauliflower and even soups.  I have NEVER made a coffee cake (or anything sweet for that matter)  with cauliflower.  That is until just this month.  This month I made a lovely puree of steamed cauliflower, mixed in some eggs, melted coconut oil along with some maple syrup and honey and stirred it all into a dry mix of flour and other regular components of a coffee cake batter.


Magically the pureed cauliflower made a beautiful and delicious coffee cake!  Imagine that.  Once again, my world as been enlightened by my participation in the Secret Recipe Club.  I was assigned, 84th&3rd this month.  I owe my new insight and experience of baking with cauliflower to the lovely and EXTREMELY talented, JJ of 84th&3rd. JJ's world on her blog of 84th&3rd is full of exquisitely gorgeous food.  Although JJ was born and raised in the United States she now lives, works and plays in Australia.  Her writing is witty and well spoken.  Her recipes are full of vibrant flavor, beautiful presentation and amazing creativity.  Even though JJ eats eggs, dairy and fish (no meat though) many, if not most, are gluten-free, dairy-free and vegan.  I have honestly never seen so many beautiful and decadent CHOCOLATE recipes that are actually good for you as I have on JJ's blog.  So yes, I am completely smitten with amazement over all JJ's talents in the kitchen.  She truly creates a beautiful world around eating well and eating healthy (delicious and beautiful) food. 


 I did alter JJ's recipe for this fantastic one-of-a-kind coffee cake in a few areas as I didn't have all the special gluten-free or vegan ingredients available in my pantry.  For the cake batter instead of using spelt flour and arrowroot or tapioca flour I used all-purpose and whole wheat pastry flour.  For a sweetener I replaced rice syrup with maple syrup.  And then in the filling ingredients instead of using coconut sugar I used brown sugar. All of these substitutions worked out fine as the taste and appearance of the cake both came out wonderfully and I was given rave reviews from those that shared the cake with me. 



Please take the time to make this cake.  It may sound a little out of the norm at first glance but it really is a wonderfully creative treat.  Your friends and family will be impressed and maybe even in a little bit of shock once they discover that cauliflower has been baked into such a delicious cake.  But seriously, no matter what they will continue to eat the cake with a smile on their face along with happy taste buds to encourage them to continue on eating.


Cinnamon Cauliflower Coffee Cake 
(recipe adapted moderately from 84th&3rd )

Filling Ingredients:
1 cup raisins
1 Tbsp rum or fruit juice
1 Tbsp warm water
1/2 cup chopped walnuts
1 tsp ground cinnamon
2 Tbsp brown sugar (JJ used 1 Tbsp coconut sugar)
2 Tbsp flour (my addition to the recipe as it helps keep the raisins and chopped nuts from falling down into the batter)

Cake Ingredients:
1 1/2 -2 cups fresh cauliflower
2 Tbsp lemon juice 
1/2 cup coconut oil, melted
1/2 cup maple syrup (JJ used 1/4 cup rice syrup)
1/4 cup honey
3 eggs
1 tsp vanilla extract (my addition)
1 cup all purpose flour (JJ used 2 cups spelt flour)
1 cup whole wheat pastry flour (JJ used 1/4 cup arrowroot or tapioca flour)
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp ground cinnamon 

Directions:

1. Preheat oven to 350 degrees F.  Grease and flour bundt pan and set aside. 

2. In a medium bowl combine raisins, water and rum (or fruit juice).  Toss all together and allow to sit for 15-20 minutes. Then add in chopped nuts, cinnamon, brown sugar and flour.  Mix well and set aside.

3. Steam fresh cauliflower until very soft and then place into a food processor along with lemon juice.  Mix in food processor until cauliflower is smooth and silky. Add in 1/2 of melted coconut oil and pulse to combine.  Add in remaining coconut oil, eggs, maple syrup and honey - mix well all together.

5. Sift all dry ingredients together into a large bowl and whisk to combine well.  

6. Add cauliflower mixture into dry ingredients.  Mix well all together.   

7.  Pour 1/2 of batter into prepared bundt pan.  Spoon filling mixture evenly over batter and then pour on remaining batter over the filling layer.

8.  Bake for 40-50 minutes or until toothpick comes out clean and cake is golden brown.  Cool in pan for 15 minutes before inverting onto serving plate. * Serve warm or at room temperature.  Enjoy!

*JJ made a delicious caramel sauce to be poured over this cake.  I choose not to make the sauce but instead to sprinkle confectioner's sugar over the cake.

FRESH Strawberry Crumble Cake

 

 
Strawberries have always been one of my all time favorite fruit.  They are beautiful.  They are RED.  And they are delicious....most of the time.  Lately the fresh strawberries in the market are definitely a beautiful red but their flavor is lacking in sweetness and are often quite tart.  In an effort to not waste the beautiful strawberries I had I decided to bake them into a cake.  I did a little search and research on the web and came up with a lovely recipe that fit my needs fully.  A simple cake that called for FRESH strawberries and tasted wonderful.  What more could I ask for! 
 
 
 
 
I was completely delighted with how easy this cake was to whip together.  Simple ingredients along with just a pie plate was all that is required to accomplish this recipe.  In the end you will have a beautiful cake that can be served anytime of the day.   My family enjoyed a slice for breakfast, as an afternoon snack for my girls, it paired lovely with a hot cup of afternoon tea for me and then of course served along side a scoop of vanilla ice cream or a dollop of whipped cream was also just perfect!
 
 
FRESH Strawberry Crumble Cake
(recipe discovered on Feathered Nest Studio which was then linked to Southern Food about.com)
 
Cake Ingredients:
1 cup flour
1/2 cup sugar
2 tsp baking powder
1/2 tsp salt
1/2 cup milk
1 egg
2 Tbsp melted butter
1 1/2 cups fresh strawberries, sliced
 
Crumble ingredients:
1/2 cup flour
1/2 cup sugar
1/4 cup COLD butter, cut into small cubes
1/4 cup chopped nuts (optional...I did not use nuts)
 
Directions:
1. Preheat oven to 375. Grease well a glass or ceramic pie plate (an 8x8 square baking pan would be fine too) and set aside.
 
2. In a large bowl sift together flour, sugar, baking powder and salt.  Whisk well all together.
 
3. Add in egg, milk and melted 2 Tbsp of butter to flour mixture.  Beat all together for 2 minutes and then pour and spread evenly into prepared pie plate.
 
4. Arrange sliced strawberries on top of cake batter.
 
5. Make crumble topping by adding together in a medium size bowl flour and sugar.  Add in COLD cubed butter. Cut into dry ingredients with a pastry cutter or with your fingers until mixture becomes small coarse crumbs.  If using chopped nuts add in now.  Sprinkle crumble topping evenly over sliced strawberries.
 
6.  Bake for 25-30 minutes or until edges of cake are a nice golden brown and a toothpick comes out clean if inserted into center of cake. Cool cake to desired temperature and serve.

Chocolate Ribbon Coffee Cake with a Milk Chocolate Ganache

 
Go ahead and try and reach through your screen to take a little finger scoop of that ganache. I dare ya!.... I know you want to.  How can you not when you see all that lovely chocolate yumminess right in front of you!?! And then of course seeing that pretty bundt cake of a coffee cake creation underneath the chocolate ganache probably doesn't help matters much either. I'm sorry. I'm so so sorry to be teasing you with such a delicious cake.  I will never, never, never do it again....at least not again today.  I can't promise what will happen in the future. ;-)
 
 
 
 As soon as I saw this lovely cake on Louanne's blog I took immediate action and printed off the recipe right away.  And then the skys opened up and a lovely group of ladies fell upon me.  A group of talented ladies that bake together (virtually) on a monthly basis from the cookbook called, Coffee Cakes - Simple, Sweet and Savory by Lou Seibert Pappas . 
The baking group is called, The Home Bakers.  I immediately took action and joined the group.  I could not be more delighted to have joined this group as ALL of the recipes in Lou's book are amazing!  AMAZING!!!

 
 Without fail coffee cakes make my heart do a little pitter patter dance of happiness.  In my world coffee cakes represent sweetness of friendship, closeness of family and surprises all around.  Coffee cakes can be eaten anytime of the day in my book. Morning, noon or night.  And they taste best when shared with others...especially over a hot cup of tea, coffee or even better, hot chocolate.  Happiness is life filled with coffee cakes.
 
 
 
 
Fruit is often found in these special cakes.  Then again so are spices and nuts and dried fruit.  Even better chocolate simply lives to be a in coffee cake.  Thus the beauty and reality of this Chocolate Ribbon Coffee Cake is magic.  The magic comes from the tender and light crumb of the cake that surrounds chocolate, nuts and a sprinkling of ground cinnamon.  Perfection.  Milk chocolate ganache was my desired addition to this cake. You can do as I did or leave the cake plain. Either way you will make the right choice.
 
If you do choose to top your cake with a ganache here is the recipe I used.....
 
Milk Chocolate GANACHE
 
*1/4 cup heavy cream
*1 bag milk chocolate morsels
 
In a large sauce pan heat heavy cream over medium heat just until steam begins to rise from the cream.  Remove sauce pan from heat and carefully stir in milk chocolate morsels.  Stir until morsels are completely melted and incorporated into the heavy cream.  Ganache will thicken as it cools.  Pour over cake.  Any remaining ganache can be stored in refrigerator in a sealed container.  Heat in microwave for 30-60 seconds to enjoy over ice cream, cakes or your finger.

(Crumblicious) Rhubarb Coffee Cake

Hooray it is rhubarb season here in Southern NH!  Yes, indeed.  Last year a good friend of mine gave me a rhubarb plant (I think he was sick and tired of hearing me always wish and moan and groan for my very own rhubarb patch in my back yard).  The funny thing is is that I totally forgot about the plant until just last week when as I walking around in my back yard and came upon the lovely large leaves of the rhubarb stalks. Yippee my VERY own rhubarb is growing! I am happy girl. 



I was even a happier girl when I came upon a lovely recipe for Rhubarb Coffee Cake from The Culinary Enthusiast (my blog assignment for the month of April from The Secret Recipe Club).  Such. A. Good. Recipe.  A yummy recipe that makes a moist layered coffee cake filled with fresh rhubarb and topped with a thick layer of crumbled sweetness - which is why I had to add to the name of this recipe "CRUMBLICIOUS" as the crumble topping is a large part of this cake.  So good!  And the beauty of this recipe is that you could easily substitute a different kind of fruit for the rhubarb filling such as berries, apples or even a mixture of strawberries and rhubarb.  YUM. I just love a versatile recipe!


Kelley, from The Culinary Enthusiast is a young woman from Chicago that enjoys being in the kitchen and loves food to the fullest.  I could definitely picture myself becoming good friends with Kelley for not only does she LOVE food but she LOVES to travel - my kind of gal! Her blog is well rounded for not only does she have a large selection recipes for baked goods (2 thumbs up from me!) but also a large variety recipes for savory dishes.  She also does a great job in reviewing new/recently released cookbooks which is always fun to read about in my eyes. I really enjoyed getting to "know" Kelley through her blog this past month! Thank you Kelley for all your sweetness, happiness and talent that you have added to the food blogging world. :-)



(Crumblicious) Rhubarb Coffee Cake

Rhubarb Filling Ingredients:

2 (heaping) cups rhubarb, sliced into 1/4-1/2" pieces
1/4 cup granulated sugar
2 tsp cornstarch
1/4 tsp salt


Crumb Ingredients:

1/3 cup brown sugar
1/3 cup granulated sugar
1 tsp cinnamon
1/2 tsp ground ginger
1/8 tsp salt
1/2 cup (1 stick) butter, melted
1 3/4 cup cake flour (all-purpose flour will work also)


Cake Ingredients:

1/3 cup sour cream (or plain yogurt)
1 large egg
1 egg yolk
2 tsp vanilla extract
1 cup cake flour (or all-purpose flour)
1/2 cup granulated sugar
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
6 Tbsp softened butter, cut into 8 pieces



Directions:

1. Preheat oven to 325 degrees F. Grease an 8x8 baking pan and set aside.

2. In a medium size bowl add in all filling ingredients - toss to combine well.  Set aside.

3. Prepare crumble topping in a medium bowl.  Add in sugars, cinnamon, ginger and salt.  Whisk all together and then pour in melted butter.  Mix together until smooth.  Add in flour until well combined.  It will resemble a solid dough.  Pack down into the bowl and then set aside.

4. Prepare cake batter.  In a small bowl combine sour cream, egg, egg yolk and vanilla extract. - set aside for the moment. 

5.  In a Kitchen Aid bowl fitted with a paddle attachment add into bowl flour, sugar, baking soda and powder and salt.  Mix together well. Add in softened butter pieces and one spoonful of the sour cream/egg mixture.   Beat together on low speed for a good 20 seconds and then increase speed for another 30 seconds.

6. Add in remaining sour cream/egg mixture. Mix all together for about 30 seconds.

7. Pour 1/2 of cake batter into prepared pan and then the rhubarb filling. Then dollop remaining cake batter over filling.




8. Break up crumble mixture with your hands or a fork into uniform pieces and sprinkle evenly over cake.  Pop cake into preheated oven for 45-55 minutes. Inserted toothpick will come out clean when coffee cake is fully baked.  Cool to desired temperature - warm or cold - and serve.



Yummmmmy.

Even my littlest enjoyed a little bite of it....she enjoys all of my baked treats....and I love her.

Super Yummy Banana Crumble Cake

I know...not another recipe made with bananas! - sorry but I just have to share this one with all of you because it is SUPER yummy and full of delicious and fun ingredients.  White chocolate chips, sour cream, pecans  (or chopped nuts of your choice) and of course, ripe bananas are just a couple of mouth watering characters that come together to make this cake.  And it's not a small cake either. It feeds a crowd. It's a great cake to make to bring to a pot luck or any event that you want to share with others.

Banana Crumb Cake
(recipe from Julie's Eats & Treats...goodness this blog is a gold mine of wonderful recipes!)
Ingredients:
2/3 cup pecans (the original recipe asked for silvered almonds)
1/4 cup brown sugar, packed
2/3 cup butter, softened
1 1/2 cup sugar
2 eggs
3/4 tsp vanilla extract (if you choose to use the silvered almonds you could do almond extract instead of the vanilla)
3 cups AP flour
2 tsp baking soda
1/4 tsp baking powder
2 cups mashed ripe bananas (3-4 bananas)
1 cup sour cream
1 cup vanilla or white chocolate chips (YUMMY!)
Directions:
1. In small bowl, combine pecans and brown sugar for the topping.  Set bowl aside for later.
2. In a large mixing bowl, cream butter and sugar together until light and fluffy.  Add in eggs, one at a time, beating well after each addition.  Add in vanilla extract.
3. In yet another bowl combine flour, baking soda and baking powder.  Add these dry ingredients alternately with the mashed bananas and sour cream to the creamed mixture of butter/sugar/eggs/etc.
4. Fold in the vanilla chocolate chips to the batter.
5. Spread batter into a greased 9x13 pan.  Sprinkle reserved topping mixture over batter.  Pop into a preheated 350 degrees oven for 35-40 minutes or until toothpick inserted in center of cake comes out clean.
Cool slightly and serve.....

Oatmeal Raisin Cookie COFFEE CAKE

Yes, you read that right.....this is a coffee cake filled with yumminess with all the delicious-ness of an oatmeal raisin cookie.  Hands down one of the BEST coffee cakes I have made in a LONG time. Of course it doesn't hurt that I am a sucker for oatmeal raisin cookies along with any type of coffee cake.  Put these two sweets together and you have a master piece I tell ya!


There are some recipes that I make and after putting in my time, energy and taste buds towards the finished product I decide not to make the recipe again....and then there are recipes that put me over the edge with happiness with all the applauds of yumminess from myself and those that I share it with.  I will definitely be making this recipe again. I recommend it to all of you to do the same.  Especially if you are a coffee cake and an oatmeal raisin cookie fan.....it's a LOVELY combination of both.

I also really liked how there was a thick ribbon of cinnamon and brown sugar goodness that ran through the middle of this cake.  Raisins and chopped nuts studded the middle of the cake too making it a true oatmeal cookie delight.



Because Valentine's Day is just around the corner I couldn't resist making this coffee cake in a heart shaped pan.


Oatmeal Raisin Cookie Coffee Cake
(recipe found on the lovely and oh so scrumptious blog,  A Whisk and a Prayer)

Cake Ingredients:

2 cups AP flour

2/3 cup oats (regular or quick cooking)

2 tsp baking powder

1/2 tsp salt

1 1/4 cup sugar

1/2 cup butter, at room temperature

2 eggs

1 cup milk

1 Tbsp lemon juice

1 tsp vanilla extract

Filling/Topping Ingredients:

1/4 cup AP flour

1 cup brown sugar

1/4 cup butter, cut into small chunks

1 1/2 tsp ground cinnamon

2/3 cup raisins

1/3 cup chopped walnuts (or nut of your choice)

Directions:

1.  Preheat oven to 350 degrees F.  Grease a 9" round (or heart shaped) spring form pan.

2. In a medium bowl whisk together the flour, baking powder and salt.  Set aside.

3. In a large mixing bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time. 

4.  Add in 1/3 of flour mixture to the butter/sugar/egg mixture.  Then mix in 1/2 the milk, lemon juice and vanilla extract followed by another 1/3 of the flour mixture.  End with remaining wet ingredients and then the last of the flour.  Set aside as you make the filling/topping.

5. Make the filling/topping -  In a medium bowl combine flour, brown sugar and cinnamon.  Add in 1/4 cup butter chunks.  Using the back of a fork or a pastry cutter blend in butter until mixture resembles coarse sand.

6. Pour 1/2 of the cake batter into prepared pan.  Then sprinkle 1/2 of the filling/topping mixture.  Sprinkle over filling/topping raisins and chopped nuts.  Pour remaining cake batter over raisins and chopped nuts.  Top everything off with the remaining filling/topping mixture.

7. Place coffee cake into oven and bake for a good 45-50 minutes (my heart shaped cake took almost a full hour to bake), or until a toothpick inserted in the center comes out clean.  Cool cake on a wire rack until it comes to room temperature and then remove sides of spring form pan.

So, so numilcious!!!

A VERY Belly Christmas and a BURSTING with Flavor Cake


Sending all of you a VERY Merry Christmas and a Happy, Happy New Year as I burst at the seams with only 3 weeks (approximately :-) left of my pregnancy.   I wishing each and everyone of you a joyous and happy New Year too!  Again, my cup runith over with gratitude and happiness for all that I have gained and experienced this past year in my daily life adventures outside of this blog and "inside" of it too.  I truly feel blessed and honored to be so fortunate with such a wonderfully full life.

Lauren Chattman author and creator of Cake Keeper Cakes gives this cake a very simple title of, Cranberry Cake but I think it should be called, Fabulous Cranberry Almond Coffee Cake.  I state this because this cake is amazing in all its simple glory of having fresh cranberries surrounded by a moist and sweet cake that is finished off by a delightfully crunchy almond topping.....reminding me of a coffee cake rather than just a simple cake.  It could be eaten for breakfast, at tea time and even as a wonderful dessert after dinner.  And it is super, super easy to put together.  In fifteen minutes flat I had the cake stirred up and placed in the oven baking away happily.  The hardest part was waiting for it to be done.  It does take a good hour for this treasure to bake.  I learned from the other talented ladies in the TCSB's group that the oven temp of the original recipe actually needed to be increased to 325 as 300 took forever for it to fully bake the cake.  Even at 325 I still had to bake the cake longer than I anticipated.  The middle of the cake just needed that extra time to fully bake. 



That being said all you need is a bag of FRESH cranberries, regular ingredients in your pantry and some good ole fashioned "patience" to allow the cake to bake to its fullest.  You will then have a master piece of a festive cake that will bring happiness and YUMMINESS to many.  Bake and share this cake ASAP!




Cranberry Cake (also known to me as Fabulous Cranberry Almond Coffee Cake)
(recipe from Cake Keepers Cakes by Lauren Chattman)

Streusel Topping Ingredients:

1 cup sliced almonds

2 Tbsp unsalted butter, melted

2 Tbsp packed brown sugar

Cake Ingredients:

2 cup flour

1 tsp baking powder

1/4 tsp salt

3 large eggs

2 cup sugar

3/4 cup (1 1/2 sticks) butter, melted and cooled

1 tsp vanilla extract

1 bag (12 oz) FRESH cranberries



Streusel Directions:

1. Preheat oven to 325 degrees F.  Grease a 10" round springform pan.

2. Combine sliced almonds, melted butter and 2 Tbsp's  brown sugar in a medium bowl.  Mix all together and then refrigerate until ready to use.

Cake Directions:

1. In a medium bowl combine flour, baking powder and salt...whisk all together.

2. In a large bowl combine eggs and sugar - beat with an electric mixer on medium-high heat for a good 5 minutes.  Mixture will become light and fluffy and increased in volume.

3. Turn mixer down to low and slowly add in melted and cooled (1 1/2 sticks) of butter.  Turn mixer up to medium speed and beat for 2 minutes.  Add in vanilla extract at the end of 2 minutes. 

4.  Gently mix in flour - 1/2 cup at a time.  Then stir in FRESH cranberries.

5. Pour batter into prepared springform pan.  Smooth top of cake with a rubber spatula.  Sprinkle cake with Streusel Topping prepared previously.

6. Bake cake for about 1 hour to 1 hour and 15 minutes.  Cake will be golden brown and a toothpick inserted in the center will come out clean when cake is done.  If you feel like your cake is getting too brown too fast yet needs more time to bake cover with tin foil as it completes it's baking time.

7. Let cake cool in pan on a wire rack for 10 minutes and then release sides of the springform pan.  Cool completely, cut into slices and serve.
